Mock Mashed Potatoes / Shepards Pie

Look what you can do with Cauliflower!

If you like potatoes, this will be a nice substitute. A favorite in my household, the nutrition is much higher and the calories much lower. Use the mock mashed potato as you would regular mashed potatoes. Great for diabetics!

Potato Salad:

  • 1 head cauliflower, cut into florets
  • ½ cup scallions
  • 3 celery ribs, chopped
  • ½ green bell pepper
  • ¼ cup chopped parsley
  • 3 egg whites, boiled, and chopped
  • paprika

 Dressing:

  • 2 tsp. Coleman’s dry mustard
  • 2 Tbsp cider vinegar
  • 1 Cup Fat Free Mayo

 Steam the cauliflower in microwave or steamer until tender, but not soft. Allow to cool. Put the scallions, celery, bell pepper and parsley in a bowl with the cooled cauliflower. Combine the dressing ingredients and gently mix into the vegetables. Fold in the egg whites and sprinkle with paprika for garnish.

 Batch, assuming 1 lb cauliflower head.

 Mashed Potatoes:

 Steam cauliflower in microwave or steamer until soft. Place in a food processor and process until smooth. Add salt and other ingredients to taste.

 Suggestions:

  • Celery salt
  • Onion salt
  • Butter buds
  • Chopped scallions
  • Garlic
  • Etc.

 

 Cauliflower Shepard's Pie:

  •  1 Head cauliflower
  • 1 small package mixed vegetables
  • 1 can tomato sauce
  • 1/2 lb extra lean ground sirloin
  • Worcestershire sauce

Seasonings

  • Butter buds
  • 1/2 cup 2% sharp cheddar cheese
  • paprika

    Chop cauliflower into small pieces. Place in a microwave safe dish with about 1 Tbsp water, cover and steam until soft (~ 10 min). Meanwhile, mix together vegetables, tomato sauce, 1 Tbsp Worcestershire sauce, salt and pepper to taste. At this point, add parsley, cilantro, oregano or what seasonings you desire.  Place in the bottom of a square baking dish coated lightly with cooking spray.

   Brown ground sirloin in a pan. Drain any excess fat and wash with water to remove any remaining fat. Return to pan and heat. Add about 1 Tbsp. water, a touch of salt and pepper, a dash of Worcestershire sauce and/or seasoning salt. A small dash of liquid smoke is nice here.  Place on top of vegetables. in baking dish.

   Place steamed cauliflower in a food processor and process until smooth. Add ~ 1 Tbsp Butter buds and a dash of salt and process until incorporated. Spread mixture over beef and vegetables. Place in 350 degree oven for 25 minutes.

   Remove from oven, top with cheese and bake for an additional 5 minutes. Remove from oven and sprinkle with paprika.

 Serves 2: Per Serving: 390 kcal.  Protein: 40 grams, Carbohydrate: 29 grams, Fat: 13 grams
